Talia’s Treats: Ginger Pear Cake w/ Sticky Toffee Glaze

My sis Talia has done it again with another delicious recipe that’s again so perfect for this yucky weather. I can just imagine curling up by the fire or heater and devouring this cake whilst watching the artistic gymnastics, and whatever takes your fancy from the Olympics.

Ginger Pear Cake w Sticky Toffee Glaze

  • 3/4 cup milk
  • 1/2 cup golden syrup
  • 1 cup brown sugar
  • 125g butter
  • 2 cups flour
  • 2tsp baking powder
  • 3tsp ginger
  • 1tsp mixed spice
  • 1/4 tsp nutmeg
  • 1 egg
  • 2 pears

 

Melt the sugar, golden syrup and milk together. Sift the dry ingredients, rub butter through until mixture resembles breadcrumbs. Add the syrup mixture, mix well, add the egg and beat. Peel, core and slice the pears. Grease and line baking tin. Sprinkle a little brown sugar over the bottom of the tin, arrange the pear slices. Pour the batter over the pears. Bake for 35-40 mins at 180C. Let sit for 10mins in the pan before removing.

Toffee glaze

  • 1 cup cream
  • 1 cup brown sugar
  • 60g butter

Melt together over a low heat until sugar dissolved. Increase heat to high and bring to the boil. Simmer for 5-7 mins or until thickened. Spoon glaze over the cake.

*Whip together 1 cup cream and 1/2 cup creme fraiche. Serve w cake – the creme fraiche/cream mix helps to cut through the sweetness.
